Most recently I bought a hat at Amsterdam’s Local Service men’s store, within a week I came back and I bought more stuff, only due to their hospitality and product selection (Paul Smith). Without going into details, I came back and spent 200% of the amount I did before on clothing within a week. Seems like a good investment.

Where I entered Amsterdam’s rather famous (infamous) Maison the Bonneterie an hour before and was rudely kicked out because I was carrying an almost empty cup of coffee. I gues they didn’t want me as a customer enough to offer to throw away my cup or keep it while I shop. At least they made that clear.

My gues would be that management/owner is not making its intention clear enough to the staff. Most probably, there is no briefing at all, so the atmosphere in the bad places would be; “We have to sell as much of <insert product> to as many costumers as possible.”  But if you think of it, in any of these places, you have already selected the products available for selling, and people walk in to buy the product you are selling. This is especially true for bars, but it also works for clothing stores. So the staff is not selling products, you are already sold on the products, the staff is there to help you select what you would want to buy and basically make you happy. To make sure you will come back whenever you need the product again, be it clothes or a drink.

Make sure the people that work for you know this.
